Instant Pot Ribs

Aloha friends!

My mom makes amazing ribs and I always look forward to eating them, particularly on summer days lounging on the patio. However, I have always been intimidated at the thought of making ribs myself, because they seemed to take so much time and effort. Then the Instant Pot came into my life and my rib cooking confidence has increased dramatically :D Check out the recipe below for a delicious and easy rib recipe.

  • Baby back or side ribs (I prefer to use baby back)

  • Dry spice rub of your choice (I’ve used The Keg Steak Seasoning and Cool Running Jerk Seasoning)

  • 1 cup water

  • 1 cup veggie/chicken stock (optional, but adds more flavour)

  • 1 cup of your favourite BBQ sauce (I’ve used Diana rib and chicken sauce or Wildly Delicious Bourbon and Maple Syrup BBQ sauce)

  • 1 tsp of liquid smoke (optional, but great addition if you want that smokey flavour)

  1. Remove membrane off the back of the ribs (if necessary).

  2. Rub seasoning on both sides of the ribs with a touch of olive oil.

  3. Fill instant pot with water, and include the stock or liquid smoke (if using)

  4. Place the ribs upright with the meat facing inwards and wrap around the wall of the pot.

  5. Secure lid and close the vent.

  6. Use the ‘pressure cook’ function and cook on high for 25-30 minutes (baby back) or 30-35 minutes (side ribs). If you want the meat to really fall off the bone, then cook for a few minutes longer.

  7. When the timer beeps, let the instant pot naturally release pressure (~10-15 minutes) and then toggle the quick release valve to release the remaining pressure.

  8. Once cooked, remove and place on baking sheet. Slather with BBQ sauce and broil for ~5 minutes OR cook on the BBQ.

Serve and enjoy!
