Pumpkin and Cherry Chocolate Bites

Aloha friends!

I have to admit that I have a sweet tooth. Some weeks it's worse than others, but I notice that the craving is particularly strong during the weekday afternoons at work. There are some days when I want a sweet treat so badly with my afternoon coffee and it literally takes all of my will power to avoid buying something on campus. To save myself the $$ and limit the amount of added sugar, fat, etc, I decided to make myself these pumpkin and chocolate cherry bites to satisfy those afternoon cravings:

Pumpkin Bites

Ingredients (makes ~24)

  • ~1 c Medjool dates, pitted
  • 1/3 c pumpkin puree (canned or homemade)
  • 1 1/4 c rolled oats
  • 1/2 c pecans
  • 1/4 c chocolate chips (I had the PC decadent semi-sweet chocolate chunks on hand)
  • 2 tbsp shredded coconut, unsweetened
  • 1 tbsp maple syrup
  • 1 tbsp chia seeds
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • pinch of sea salt
  • pinch of cloves

Chocolate Cherry Bites

Ingredients (makes ~10-15):

  • ~1 c Medjool dates, pitted
  • 3 tbsp natural peanut butter (or any nut butter)
  • 2/3 c rolled oats
  • 1/4 c shredded coconut, unsweetened
  • 1/4 c chocolate chips (I had the PC decadent semi-sweet chocolate chunks on hand)
  • 1/4 c dried cherries
  • 1 tsp vanilla
  • pinch of sea salt

Directions:

  1. Pulse all ingredients in a food processor, and a sticky dough ball will start to form. Note: If the dates are dry, soak in hot water for ~10 minutes beforehand.
  2. Take ~1 tsp-tsbp worth of the mixture (depending on how big you want the bites to be) and form into small balls.
  3. Place on parchment paper and refrigerate or freeze. I usually keep the bites in the fridge for a week if I think I'll get through them quickly or else I'll put them in freezer when I just want to snack on one every once in a while.
