Tasty and Healthy Banana Muffins

One of my favourite things to do is bake and I especially love creating healthy and delicious treats. My favourite muffin has to be a classic banana chocolate chip... I mean who doesn't love the combination of  chocolate and bananas? This muffin recipe was a childhood favourite of mine and one of the few things my mom ever baked (lets just say I did not inherit my love for baking from her). I experimented with my favourite childhood recipe and finally tweaked it just the right amount to make it healthy but still delicious.

If you love muffins, give these a try. They are super easy to make, low in sugar (7 grams), and a good source of fibre (bonus)!

Makes 11-12 muffins

Ingredients: 

1 1/2 cup whole wheat flour
2 tbsp. ground flax
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
2 tbsp. brown sugar (or white)
1/4 cup vegetable oil
2 eggs, beaten
1/2 cup light sour cream (can also use plain Greek or vanilla yogurt)
3 very ripe bananas, mashed
2 tsp. vanilla extract
Dark chocolate chips (optional)

Directions:

Preheat oven to 350 F. In a bowl mix mashed banana, vanilla extract, beaten eggs, sour cream or yogurt and vegetable oil. In a separate bowl mix together flour, flax, salt, baking powder, sugar, and baking soda. Add liquid mixture to dry and mix together well. 
Add the optional dark chocolate chips (~1/3- 1/2 cup - highly recommended). 
Place in greased or lined muffins tins and bake for 20-23 minutes or until a golden brown colour!
