Some Bunny Pass the Mini Egg Cookies!

Aloha friends!

In the last few weeks my Instagram feed has been filling up with pictures of Cadbury Mini Egg cookies. I could not resist the temptation anymore, so I decided to make my own batch for Easter. There is an Anna Olson basic brown sugar cookie dough recipe that I absolutely love and I knew it would be just perfect. The recipe has only a few ingredients and it's super quick to whip up a batch of cookies. My only addition to the recipe of course is the mini eggs! Check out the recipe below to make a batch for yourself.....errrr I mean to share :)

Mini Egg Cookies


  • 1/2 cup unsalted butter, at room temp
  • 1/2 cup packed brown sugar
  • 1/4 cup white granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 2 tbsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp salt


  • 1. Cream the butter, brown sugar, and white sugar until fluffy.
  • 2. Beat in the egg and vanilla.
  • 3. In another bowl, stir the flour, cornstarch, baking soda, and salt.
  • 4. Add the dry mixture into the butter mixture and stir until blended.
  • 5. Add in the Cadbury Mini Eggs!!
  • 6. Drop little dough balls onto a lightly greased baking tray or parchment paper and bake for about 10 minutes at 350 degrees. Let cool for 5 minutes before eating (although these are so delicious you may not be able to wait).

*Makes ~12 large or ~24 small cookies.
