The 'What's in your fridge?' Cinco de Mayo Edition

Aloha friends!

I've been drooling all day seeing various taco recipes all over Instagram in the spirit of Cinco de Mayo. I've been a busy bee today with lecture prep, as I'm teaching an introductory nutrition night course. The course is condensed into 7 weeks and its the first time it has ever been offered. It has been a fun challenge to design a course, but I also need to make sure that I don't fall behind with any of the prep because in a blink of an eye the course will be done and over with! 

Since I was being really productive today and getting a lot accomplished, I didn't have a chance to brainstorm a fancy dinner or to run out to the store to pick up ingredients. Except that it wasn't an issue at all, since all I needed to do was check in my fridge to make my own tacos tonight. I had frozen leftover pulled chicken from the time I made pulled chicken pizza, and I had corn tortillas that I stored in the freezer as well from our last taco night. All that was left for me to do was scavenge the fridge for toppings:

  • Avocado
  • Lime
  • Radish
  • Cherry Tomatoes
  • Grated cheese
  • Red pepper
  • Green onion
  • Arugula

And that was that! I heated up my chicken in the oven and piled on all those toppings for a delicious quick taco meal!

Now where are the margaritas????
