Go-to Banana Chocolate Chip Muffins

Aloha friends!

There is nothing better than a classic go-to recipe to have in your back pocket. This muffin recipe is one that I have been using for as long as I can remember. It never fails, the recipe is simple, and these muffins are super quick to make. Not to mention the fact that they are usually well liked by others. I used to make these muffins for breakfast if I had friends staying over, and they would be gone in a snap of a finger. I have also made these for road trips, camping, to bring when visiting friends, and whenever I have a craving for a good muffin. Check out the recipe for yourself, you will not regret it!

BANANA CHOCOLATE CHIP MUFFINS

Ingredients:

  • 1 cup flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1 or 2 ripe bananas
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1/4 cup chocolate chips

Directions:

  1. In a bowl, sift together the flour, baking powder, baking soda, and salt.
  2. In another bowl, beat together the banana(s) egg, sugar, vegetable oil, and vanilla.
  3. Mix the wet mixture with the flour mixture.
  4. Fold in the yogurt and chocolate chips.
  5. Spoon into muffin lined tins and sprinkle the toffee bits on top of the muffins.
  6. Bake for ~15 minutes at 350 degrees in the oven. Makes ~12 small muffins.

Note:

  • You can swap white sugar for brown sugar.
  • You can also use sour cream or Greek yogurt instead of regular yogurt (but I find the muffins are less fluffy in this case).
  • If you use 2 large bananas the muffins will be more moist (ugh I know some people hate this word, but its the best description in this case).
  • I also often double the recipe to make larger muffins or to get ~18 muffins (which I suggest because these go fast).

I always intend to freeze half of the batch to see how well these muffins freeze, but every single darn time I just eat them all! I will admit that I have no self-control when it comes to these muffins, and this week they baked so perfectly that not a single made it to the freezer once again :P
